Ingredients: 

For the Salad: 

- 1 cup brown rice, cooked and cooled 

- 1 cup cherry tomatoes, halved 

- 1 cucumber, diced 

- 1 red bell pepper, diced 

- 1 cup canned chickpeas, drained and rinsed 

- 1/4 cup red onion, finely chopped 

- 1/4 cup Kalamata olives, sliced

- 3 tablespoons extra-virgin olive oil

Instructions: 

  

1. Cook and Cool Brown Rice: 

   - Cook the brown rice according to package instructions and let it cool to room temperature. 

  

2. Prepare Vegetables and Chickpeas:

   - Dice the cucumber, red bell pepper, and red onion. 

   - Halve the cherry tomatoes and slice the Kalamata olives. 

   - Drain and rinse the canned chickpeas. 

  

3. Assemble the Salad:

   - In a large mixing bowl, combine the cooled brown rice, cherry tomatoes, cucumber, red bell pepper, red onion, chickpeas, Kalamata olives, and fresh parsley. 

   - If desired, add crumbled feta cheese for an extra layer of richness.
