  2. Toss the sweet potato, peppers, courgette, and onion with olive oil, salt, pepper, and smoked paprika. Spread the veggies in a single layer on the halogen oven tray. 

  3. Roast in the halogen oven for 20-25 minutes, stirring halfway through, until the veggies are golden and tender. 

  4. Cook the quinoa according to the package instructions and let it cool. 

  5. Assemble your meal prep bowls by layering quinoa, roasted veggies, and a handful of spinach or rocket leaves. Store in airtight containers in the fridge and enjoy with a drizzle of your favourite dressing! 

 

 

2. Homemade Hummus & Veggie Sticks Using the Andrew James Food Processor

For a quick, protein-packed meal that’s perfect for dinner, this lean turkey stir-fry comes together in minutes with the Andrew James Multi Cooker. Full of lean protein and fibre-rich vegetables, it’s a tasty and nutritious option for your meal prep. 

Ingredients: 

  • 500g lean turkey mince 

  • 1 red pepper, sliced 

  • 1 courgette, sliced 

  • 2 carrots, sliced 

  • 2 cloves garlic, minced 

  • 2 tbsp low-sodium soy sauce 

  • 1 tbsp sesame oil 

  • 1 tsp ginger, grated 

  • Fresh coriander (optional) 

Method: 

  1. Set your Andrew James Multi Cooker to the sauté function and heat the sesame oil. 

  2. Add the garlic and ginger, stirring for 1 minute until fragrant. 

  3. Cook the turkey mince until browned, then add the vegetables and soy sauce. Continue to cook until the veggies are tender but still crisp (about 5-7 minutes).
