1. Caprese Skewers 

Ingredients: 

  • Cherry tomatoes 

  • Fresh mozzarella balls 

  • Fresh basil leaves 

  • Balsamic glaze 

Instructions: 

  • Thread cherry tomatoes, mozzarella balls, and basil leaves onto small skewers. 

  • Drizzle with balsamic glaze just before serving. 

 
 

2. Chicken Salad Wraps 

Ingredients: 

  • 2 cups cooked chicken, shredded 

  • 1/4 cup mayonnaise 

  • 1/4 cup Greek yogurt 

  • 1 celery stalk, finely chopped 

  • 1/4 cup dried cranberries 

  • 1/4 cup chopped pecans 

  • Salt and pepper to taste 

  • Large lettuce leaves or whole wheat wraps 

Instructions: 

  • In a large bowl, combine chicken, mayonnaise, Greek yogurt, celery, cranberries, and pecans. 

  • Season with salt and pepper. 

  • Spoon the chicken salad onto lettuce leaves or wraps and roll up tightly. 

 
 

3. Pasta Salad with Fresh Vegetables 

Ingredients: 

  • 8 oz pasta (fusilli or rotini) 

  • 1 cup cherry tomatoes, halved 

  • 1 cucumber, diced 

  • 1 bell pepper, diced 

  • 1/4 cup red onion, finely chopped 

  • 1/4 cup black olives, sliced 

  • 1/4 cup feta cheese, crumbled 

  • 1/4 cup Italian dressing 

Instructions: 

  • Cook pasta according to package instructions. Drain and rinse with cold water. 

  • In a large bowl, combine pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta cheese. 

  • Toss with Italian dressing. Chill until ready to serve. 

 
 

4. Fresh Fruit Salad 

Ingredients: 

  • 1 cup strawberries, hulled and sliced 

  • 1 cup blueberries 

  • 1 cup pineapple chunks 

  • 1 cup watermelon, cubed 

  • 1 cup grapes, halved 

  • 2 tablespoons honey 

  • 1 tablespoon lime juice 

  • Fresh mint leaves for garnish 

Instructions: 

  • In a large bowl, combine strawberries, blueberries, pineapple, watermelon, and grapes. 

  • In a small bowl, whisk together honey and lime juice. Drizzle over the fruit and toss gently to combine. 

  • Garnish with fresh mint leaves. 

 
 

5. Mini Quiches 

Ingredients: 

  • 1 package refrigerated pie crusts 

  • 6 large eggs 

  • 1 cup milk 

  • 1/2 cup grated cheddar cheese 

  • 1/2 cup cooked ham, diced 

  • 1/4 cup green onions, chopped 

  • Salt and pepper to taste 

Instructions: 

  • Preheat oven to 375°F (190°C). 

  • Roll out pie crusts and cut into circles to fit a mini muffin tin. Press the circles into the tin. 

  • In a large bowl, whisk together eggs, milk, cheese, ham, green onions, salt, and pepper. 

  • Pour the egg mixture into the pie crusts, filling each one about 3/4 full. 

  • Bake for 20-25 minutes, or until the quiches are set and golden brown. 

 
 

6. Lemon Bars 

Ingredients: 

  • 1 cup all-purpose flour 

  • 1/2 cup butter, softened 

  • 1/4 cup powdered sugar 

  • 2 large eggs 

  • 1 cup granulated sugar 

  • 2 tablespoons all-purpose flour 

  • 1/2 teaspoon baking powder 

  • 2 tablespoons lemon juice 

  • Powdered sugar for dusting 

Instructions: 

  • Preheat oven to 350°F (175°C). 

  • In a medium bowl, combine 1 cup flour, butter, and powdered sugar. Press into the bottom of an 8x8-inch baking pan. 

  • Bake for 15-20 minutes, or until golden brown. 

  • In a separate bowl, whisk together eggs, granulated sugar, 2 tablespoons flour, baking powder, and lemon juice. 

  • Pour over the baked crust and bake for an additional 20-25 minutes, or until the filling is set. 

  • Let cool and dust with powdered sugar before cutting into squares.
