1. Caprese Skewers
Ingredients:
Cherry tomatoes
Fresh mozzarella balls
Fresh basil leaves
Balsamic glaze
Instructions:
Thread cherry tomatoes, mozzarella balls, and basil leaves onto small skewers.
Drizzle with balsamic glaze just before serving.
2. Chicken Salad Wraps
Ingredients:
2 cups cooked chicken, shredded
1/4 cup mayonnaise
1/4 cup Greek yogurt
1 celery stalk, finely chopped
1/4 cup dried cranberries
1/4 cup chopped pecans
Salt and pepper to taste
Large lettuce leaves or whole wheat wraps
Instructions:
In a large bowl, combine chicken, mayonnaise, Greek yogurt, celery, cranberries, and pecans.
Season with salt and pepper.
Spoon the chicken salad onto lettuce leaves or wraps and roll up tightly.
3. Pasta Salad with Fresh Vegetables
Ingredients:
8 oz pasta (fusilli or rotini)
1 cup cherry tomatoes, halved
1 cucumber, diced
1 bell pepper, diced
1/4 cup red onion, finely chopped
1/4 cup black olives, sliced
1/4 cup feta cheese, crumbled
1/4 cup Italian dressing
Instructions:
Cook pasta according to package instructions. Drain and rinse with cold water.
In a large bowl, combine pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta cheese.
Toss with Italian dressing. Chill until ready to serve.
4. Fresh Fruit Salad
Ingredients:
1 cup strawberries, hulled and sliced
1 cup blueberries
1 cup pineapple chunks
1 cup watermelon, cubed
1 cup grapes, halved
2 tablespoons honey
1 tablespoon lime juice
Fresh mint leaves for garnish
Instructions:
In a large bowl, combine strawberries, blueberries, pineapple, watermelon, and grapes.
In a small bowl, whisk together honey and lime juice. Drizzle over the fruit and toss gently to combine.
Garnish with fresh mint leaves.
5. Mini Quiches
Ingredients:
1 package refrigerated pie crusts
6 large eggs
1 cup milk
1/2 cup grated cheddar cheese
1/2 cup cooked ham, diced
1/4 cup green onions, chopped
Salt and pepper to taste
Instructions:
Preheat oven to 375°F (190°C).
Roll out pie crusts and cut into circles to fit a mini muffin tin. Press the circles into the tin.
In a large bowl, whisk together eggs, milk, cheese, ham, green onions, salt, and pepper.
Pour the egg mixture into the pie crusts, filling each one about 3/4 full.
Bake for 20-25 minutes, or until the quiches are set and golden brown.
6. Lemon Bars
Ingredients:
1 cup all-purpose flour
1/2 cup butter, softened
1/4 cup powdered sugar
2 large eggs
1 cup granulated sugar
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
2 tablespoons lemon juice
Powdered sugar for dusting
Instructions:
Preheat oven to 350°F (175°C).
In a medium bowl, combine 1 cup flour, butter, and powdered sugar. Press into the bottom of an 8x8-inch baking pan.
Bake for 15-20 minutes, or until golden brown.
In a separate bowl, whisk together eggs, granulated sugar, 2 tablespoons flour, baking powder, and lemon juice.
Pour over the baked crust and bake for an additional 20-25 minutes, or until the filling is set.
Let cool and dust with powdered sugar before cutting into squares.
