3. Mini Pavlovas Using the Andrew James Stand Mixer

End the night on a sweet note with mini pavlovas! They’re light, crisp, and topped with fresh cream and fruit. The Andrew James Stand Mixer takes all the effort out of whipping up the perfect meringue.

  • 4 large egg whites

  • 200g caster sugar

  • 1 tsp white wine vinegar

  • 1 tsp cornflour

  • 300ml double cream

  • Fresh berries and mint leaves for topping

Method:

  1. Preheat your oven to 120°C and line a baking tray with parchment paper.

  2. Whisk the egg whites in the Andrew James Stand Mixer until stiff peaks form.

  3. Gradually add the caster sugar, one spoonful at a time, until the meringue is thick and glossy.

  4. Fold in the vinegar and cornflour to stabilise the mixture.

  5. Spoon the meringue onto the baking tray, forming small nest shapes.

  6. Bake for 1 hour, then turn off the oven and let the pavlovas cool completely.

  7. Whip the cream in the stand mixer and top each pavlova with a dollop of cream and fresh berries.

These mini pavlovas are the perfect bite-sized dessert, adding a touch of elegance to your New Year’s Eve party.
