Ingredients:

  

For the Burrito Filling:

  - 4 large eggs

  - 1/2 cup spinach, chopped 

  - 1/2 cup cooked black beans (optional) 

  - 1/2 cup shredded cheddar cheese (or your preferred cheese) 

  - 2 tbsp olive oil or butter 

  - Salt and pepper to taste 

  - 1/4 tsp garlic powder 

  - 1/4 tsp paprika (optional) 

   

For Assembling the Burrito:

  - 4 large tortillas (whole wheat or regular) 

  - Salsa (optional) 

  - Sour cream or Greek yogurt (optional) 

  - Hot sauce (optional) 

  - Fresh avocado slices (optional) 

  

Instructions:

  

Step 1: Prep Your Ingredients

  

Start by prepping all your ingredients. Finely chop the onion, bell pepper, and spinach. If you're adding black beans, ensure they’re cooked and drained. Shred your cheese and set everything aside. Crack the eggs into a bowl, add the milk, and whisk together until fully combined. Season with salt, pepper, garlic powder, and paprika. 

  

Step 2: Sauté the Vegetables in the Multicooker

  

Set your Multicooker to the sauté function and add 1 tablespoon of olive oil or butter. Once heated, add the chopped onions and bell peppers. Sauté for 2-3 minutes until they start to soften. Add the chopped spinach and cook for another 1-2 minutes until wilted. If you’re using black beans, stir them in now to heat them through. 

  

Step 3: Cook the Eggs

  

Pour the egg mixture into the Multicooker with the sautéed vegetables. Stir gently to scramble the eggs, ensuring they cook evenly. Continue to stir until the eggs are just set but still creamy. This should take about 3-4 minutes. Turn off the Multicooker and stir in half of the shredded cheese, allowing it to melt into the eggs. 

  

Step 4: Warm the Tortillas

  

While the eggs are cooking, warm your tortillas. You can do this by placing them on a hot, dry skillet for about 30 seconds on each side or microwaving them between damp paper towels for 20-30 seconds. Warming the tortillas makes them more pliable and easier to roll.

To roll the burrito, fold the sides of the tortilla inward over the filling. Then, starting from the bottom, roll the tortilla tightly around the filling. Tuck in the ends as you go to keep everything inside. Repeat with the remaining tortillas and filling.
