What You’ll Need: 

- 1 garlic clove, halved 

- 1 cup dry white wine (like Sauvignon Blanc or Pinot Grigio) 

- 1 tablespoon lemon juice 

- 8 ounces Gruyère cheese, grated 

- 8 ounces Emmental cheese, grated 

- 1 tablespoon cornstarch 

- 2 tablespoons kirsch (cherry brandy), optional 

- Freshly ground black pepper and nutmeg, to taste 

  

For Dipping: 

- Cubes of crusty bread (baguette or sourdough work well) 

- Sliced apples or pears 

- Steamed or roasted vegetables (broccoli, cauliflower, carrots) 

- Cooked sausage or ham 

- Roasted potatoes 

  

Step-by-Step Directions 

  

Step 1: Prep the Ingredients 

Grate your cheeses and toss them with the cornstarch. This will help prevent clumping and create a smooth, creamy texture when the cheese melts. Prep your dippers—cut the bread into bite-sized cubes, slice the fruits, and cook or steam the veggies and proteins. 

  

Step 2: Flavor the Pot 

Rub the inside of your fondue pot (or a heavy-bottomed saucepan) with the cut sides of the garlic clove. This adds a subtle garlic flavor without overpowering the cheese. 

  

Step 3: Heat the Wine 

Place the pot over medium heat and pour in the white wine and lemon juice. Heat the mixture until it's just simmering, but not boiling. The acidity from the wine and lemon helps to break down the cheese proteins, resulting in a smooth fondue.
